Special Issue Information

Publishing high-quality articles on natural metabolites in such as proteobiotics will be a platform to explore the prospective applications of specific probiotic in the fermented milk products. Proteobiotics are oligopeptides that consider as natural metabolites produced by several genera of probiotic bacteria including Lactobacillus spp., Lactococcus spp., and Bifidobacterium spp. Proteobiotics account for the beneficial effects of the aforementioned probiotic genera. Exploring the proteobiotics action and their functions in administrating the probiotic bacteria in adequate amounts may confer health benefits for the host in such as lowering the uric acid. Investigation the microbe dynamics in the gut system (in vivo) is important to specify the effective role of proteobiotics in maintaining probiotic against the multiple stresses. Most of the research focused on the application of proteobiotics in drugs, but few were stated in milk products. Unlike stresses such as heterogeneous matrices and natural acidity are constraints for the metabolic activity of probiotic in milk products. Improvement the functional attributes of probiotic by using various additives of fruits in milk technology express the purpose of this issue. As well, governing the technological characteristics of fermented milk products is important to get integration advantage in the probiotic industry.
